Red Rice

Ingredients
Red Rice
Instructions: Version 1 (Mushrooms Pieces)
  1. Soak dried mushrooms in 1 cup of water for 15 minutes.
  2. Chop onion.
  3. Heat oil in sauce pan.
  4. Add chopped onion and saute until just starting to brown.
  5. Chop garlic clove fine.
  6. Add chopped garlic.
  7. Pour off and save the water from mushrooms
  8. Add mushrooms.
  9. Saute onion, garlic and mushrooms together for about 2 minutes, stirring frequently.
  10. Wash and drain rice.
  11. Add rice to pan and fry for about 2 more minutes, stirring frequently.
  12. Add water to the reserved mushroom water to make 2 cups
  13. Add the salt and curry powder to the water and mix well
  14. Add the water to to pan, reduce heat to minimum, and cook until the rice is tender but not mushy (35 to 45 minutes)
Instructions: Version 2 (Pureed Mushrooms)
  1. Soak dried mushrooms in 1 cup of water for 15 minutes.
  2. Chop onion.
  3. Heat oil in sauce pan.
  4. Add chopped onion and saute until just starting to brown.
  5. Chop garlic clove fine.
  6. Add chopped garlic.
  7. Saute onion, and garlic together for about 2 minutes, stirring frequently.
  8. Wash and drain rice.
  9. Add rice to pan and fry for about 2 more minutes, stirring frequently.
  10. Process mushroom with the water in which they are soaking in blender until smooth.
  11. Add processed mushrooms to pan
  12. Add the salt and curry powder to 1 cups of water and mix well
  13. Add the water to to pan, reduce heat to minimum, and cook until the rice is tender but not mushy (35 to 45 minutes)
