Instructions: Version 1 (Mushrooms Pieces)
- Soak dried mushrooms in 1 cup of water for 15 minutes.
- Chop onion.
- Heat oil in sauce pan.
- Add chopped onion and saute until just starting to brown.
- Chop garlic clove fine.
- Add chopped garlic.
- Pour off and save the water from mushrooms
- Add mushrooms.
- Saute onion, garlic and mushrooms together for about 2 minutes, stirring frequently.
- Wash and drain rice.
- Add rice to pan and fry for about 2 more minutes, stirring frequently.
- Add water to the reserved mushroom water to make 2 cups
- Add the salt and curry powder to the water and mix well
- Add the water to to pan, reduce heat to minimum, and cook until the rice is tender but not mushy (35 to 45 minutes)

Instructions: Version 2 (Pureed Mushrooms)
- Soak dried mushrooms in 1 cup of water for 15 minutes.
- Chop onion.
- Heat oil in sauce pan.
- Add chopped onion and saute until just starting to brown.
- Chop garlic clove fine.
- Add chopped garlic.
- Saute onion, and garlic together for about 2 minutes, stirring frequently.
- Wash and drain rice.
- Add rice to pan and fry for about 2 more minutes, stirring frequently.
- Process mushroom with the water in which they are soaking in blender until smooth.
- Add processed mushrooms to pan
- Add the salt and curry powder to 1¼ cups of water and mix well
- Add the water to to pan, reduce heat to minimum, and cook until the rice is tender but not mushy (35 to 45 minutes)
