Eggs with Fresh Thyme

Now that I have thyme growing again, I am back to making these eggs. They go wonderfully with Home Fried Potatoes and make a great breakfast or light supper.

Ingredients

• 2 tsp vegetable oil
• 4 eggs
• Some fresh thyme leaves¹
• ½ tsp salt
• ¼ tsp fresh ground black pepper
• ¼ tsp onion powder
• Salt (to taste)

Instructions

1. Heat vegetable oil in sauce pan.
2. Crack the eggs into a bowl
3. Add the remaining ingredients and beat well.
4. Cook over low heat, turning frequently with a spatula.
5. When eggs are firm, but not dry, use the spatula to chop up any large pieces and serve immediately.

¹ We have English thyme growing on our kitchen window ledge. If you do not have thyme growing in your kitchen or garden, I suggest you get some. The cost of a thyme plant (we got our's at 99¢ Store) is typically less then the cost of a small bunch at a suppermarket. Then, with minimum care, you will have fresh thyme whenever you need it.
