Pecan Pie
I created this recipe wen I needed to bring a pie to a party that had some guests
had celiac disease (an immune disease in which people can't eat gluten
because it will damage their small intestine). People on Keto diets also love this pie because
it has very few carb. If neither of thest conditions apply, the recipe works just as well with
a normal pie crust.
Crust Ingredients
- Gluten free pie crust mix
- Any other ingredients required by the instructions on the box
Filling Ingredients
- 1 cup Sugar Twin Granulated Brown
- 1 stick (¼ lb) butter
- 4 eggs yolks
- 1 cup sugar free pancake syrup
- 1 tbsp. dark rum
- 1 teaspoon vanilla
- ¾ cup pecan pieces
- ¼ cup pecan halves
Instructions
- Make pie crust according to directions on box.
- Cream Sugar Twin and butter together
- Add eggs to mixture one at a time, beating until smooth each time.
- Add all remaining ingredients except pecans and beat until smooth.
- Stir in pecans pieces.
- Pour into pie crust.
- Arrange pecan halves on top.
- Bake at 425° until filling has set (about 30 minutes).
- Cool completely, about 2 hours.
- Store in refrigerator.
